Hey everyone hope all is well! Being at home for the past month I've been testing out and modifying recipes to get more creative at home. We have a bag of frozen tilapia in the freezer so I figured why not make something with it! We like it hot and spicy over here so I decided on blackened tilapia with roasted veggies. Here is the simple recipe below! Seasoning: 1 tbsp Cajun seasoning 1 tbsp oregano 1 tbsp crushed red pepper 1 tbsp paprika 1 tbs chopped onion 1 tbs garlic powder s + p Mix this all together in a bowl to prepare to dip your tilapia in it. I make sure that I pat my tilapia down with a paper towel first before dipping in the mixture to get off all the excess moisture. It will still easily be coated in the seasoning! Make sure you coat both sides in the seasoning so it will be nice and flavorful! Heat oven to 400° and layer a pan with foil. Add oil over foil and coat to make sure the tilapia doesn't stick. If I have any extra seasoning I add it to the tilapia and rub it in. If it isn't sticking you can add a little oil to help! Bake for about 25 minutes, I baked veggies at the same time so I cooked mine a little longer! Your tilapia should be golden brown and packed with flavor! I served mine with basmati rice and roasted veggies (flavor tip add turmeric to your veggies, so good!).
