Instapot spicy garlic chicken

Hey guys, hope you're all surviving thorough this whole COVID social distancing thing! We have always cooked at home, but now because we really aren't eating out at all, I figured why not share some of my favorite recipes with you? 

To be perfectly honest I hate when you find a recipe you might want to try, but then it takes forever to scroll through the elaborately written post - props to you all for your writing abilities though! I just want to see if I have the ingredients and if I can make it easily, so here is my simple recipe for you all that I adapted to make more our style.

Main Ingredients:
3-4 boneless, skinless chicken breasts
Salt and pepper (to taste)
Sesame seeds and green onions to serve
2 cups of rice
Olive oil (tsp)

Ingredients for sauce: (if you want to just use a store bought sauce you can too but this one is delish!)
1/2 cup honey
1/3 cup coconut aminos (or soy sauce)
1/3 cup onion, diced
1/4 cup ketchup
2 tablespoons avocado oil (or veggie oil)
Minced garlic - spoonful
Sriracha - however spicy you want to make it!
Ingredients to thicken sauce:
3 tablespoons corn starch
1/4 cup water

Chicken:
  1. In a bowl mix together honey, aminos, onion, ketchup, oil, garlic and sriracha to make sauce.
  2. Put chicken in instapot and season with s+p
  3. Pour sauce over chicken, seal, and cook on high pressure for 15 minutes
  4. Quick release - remove chicken and dice, keep to the side for now
  5. Dissolve 3 teaspoons cornstarch in 1/4 cup water in a small bowl. In pot change setting to sauté, add cornstarch mixture and sauté for 5 min or less to thicken.
  6. Add chicken back in and mix.

*if you don’t have an instapot you can use a crockpot! Just adjust cooking time on high for 3-4 hours*

​Rice:
Many people prefer to make their rice a specific way, but because I use the instapot to make my chicken dish I use the traditional method for rice.
  1. Rinse rice (we prefer basmati but any long grain white rice will work)
  2. The ratio for rice to water is 1:1 so for two cups of rice add two cups of water
  3. Add about a tsp of oil and a pinch of salt
  4. Bring rice to a boil and then cover and simmer
  5. Takes about 10-15 minutes
  6. If you are doing it in an instapot do everything the same but then cook on high pressure for 4 minutes, let naturally release for about 8 and you're good to go!

Add Sesame seeds & green onion for toppings and serve over rice and you're good to go! The first time I made this my husband absolutely loved it and requested it again...and to make it spicier of course! Let me know in the comments if you try it!
